Song Cultivar

Mid-eastern slope, downstream of the mountain spring. Elevation 1,100m above sea level. The water passes through the roots on its way down. After rain, mist often lingers here longer than elsewhere on the estate, and a thin layer of moss covers the surface of the trees. Yet the midday sun reaches fully, keeping the balance between damp and warmth. This produces an even, continuous flavour: florals clear but never loud, a subtle woodiness and humid breath beneath.

Harvested 2024. Charcoal-roasted, carefully stored and intentionally rested for two years. Only a small quantity is released; the rest continues to age.
